Butter Beans alla Vodka

I use canned beans in this recipe to keep it simple. My favorite beans to use are Jack’s Butter Beans. They come in a box and the beans are really large and creamy. They are a little hard to find, but if you spot them give them a try!
Prep Time 10 minutes
Cook Time 30 minutes
Servings: 2 – 4
Course: Dinner

Ingredients

  • 2 tbsp olive oil
  • ½ medium onion diced
  • 3 garlic cloves minced
  • ½ tsp red pepper flakes optional
  • One 28-ounce can crushed tomatoes
  • ½ tsp salt
  • 5 to 6 basil leaves
  • ¼ cup vodka
  • ½ cup heavy cream
  • 2 cans butter beans drained and rinsed
  • ¼ cup grated parmesan

Method

  1. Heat the olive oil in a sauce pan over medium heat, then add the onion. Sauté the onion until they soften and the color starts to fade, about 5 minutes. Add the garlic and red pepper flakes and sauté for another minute, then add the crushed tomatoes, salt, and basil.
  2. Lower the heat to medium-low and let the sauce simmer for about 15 minutes. Taste and add more salt if necessary, then add the vodka.
  3. Let the sauce simmer for another 10 minutes. If you prefer a smoother sauce, transfer to a blender and blend until smooth, then return to the pot. Stir in the heavy cream and then add the beans. Let cook for about 5 minutes, until the beans are warm, then serve with the Parmesan sprinkled on top.
