Cinnamon Sugar Apple Chips
These are an easy snack, and such a great way to use up leftover apples!

- Preheat your oven to 225°F. Line two baking sheets with parchment paper.
- Cut off the tops of each apple where the stem is. Then use a mandoline or vegetable slicer to thinly slice each apple to about ⅛ inch thick. Use a small circular cookie cutter or the round side of a metal piping tip to cut out the center of each apple slice where the seeds are. Alternatively, you can use an apple corer to core the apples first, then slice them.
- Place the apple slices on the baking sheets in a single layer.
- In a small bowl, combine the sugar and cinnamon. Sprinkle this over the apple slices.
- Bake the apple slices until they are dry and the edges start to curl up, 75 to 90 minutes. If you placed the baking sheets on different racks in your oven, swap them about halfway through so they bake evenly. The apple chips will still be slightly soft when they are done baking, and will crisp up as they cool outside the oven. To test when they are done, remove one from the oven and let it cool for 2 to 3 minutes. If it is still not crispy, the apple chips need more time.
