Cranberry-Pistachio Chocolate Bark

This is a simple recipe to make but endlessly customizable. I use semi-sweet chocolate chips as my base, but dark chocolate or milk chocolate would also work. This recipe calls for a cranberry and pistachio topping, but you can get creative! Broken candy canes, coconut strips, orange zest, mini marshmallows, and dried strawberries all make great toppings. Just make sure you add them right after you pour the chocolate so they stick.
Prep Time 10 minutes
Rest Time 30 minutes
Servings: 6 to 8
Course: Snack

Ingredients

  • 1 ½ cups semi-sweet chocolate chips or 9 oz baking chocolate, broken into small pieces
  • ½ cup white chocolate chips or 3 oz white chocolate bar, broken into small pieces
  • ¼ cup dried cranberries
  • ¼ cup roasted pistachios roughly chopped
  • ½ tsp flakey sea salt

Method

  1. Line a baking sheet with aluminum foil.
  2. Place the chocolate chips in a microwave-safe bowl and microwave them for 30 seconds. Stir the chocolate chips with a fork or spoon then put them back in the microwave for another 30 seconds. Continue microwaving in 30 second increments, stirring between each time, until the chocolate is fully melted.
  3. Pour the pour chocolate onto the baking sheet and use a spatula to spread it around into a thin layer.
  4. Place the white chocolate chips in another microwave-safe bowl and heat them in 30 second increments, stirring between each time, until they are fully melted. Drizzle the melted white chocolate on top of the baking sheet, then use a spoon to spread the white chocolate to create a marble effect.
  5. Immediately sprinkle on the cranberries, pistachios, and sea salt, and then press down on them slightly to make sure they stick to the chocolate. Freeze the baking sheet for at least 30 minutes, or until the chocolate is firm. Remove the baking sheet from the oven and break the chocolate into pieces, then serve.
