Prep Time 10 minutes
Cook Time 10 minutes
Servings: 2
Course: Dessert

Ingredients

Cupcake:
  • 2 tbsp sugar
  • 1 egg white
  • 2 tbsp melted butter
  • 1 tsp vanilla
  • 2 tbsp milk
  • ¼ cup flour
  • ¼ tsp baking powder
  • Pinch of salt
Frosting:
  • 2 tbsp softened butter
  • ½ cup powdered sugar
  • 1 tsp milk
  • ¼ tsp vanilla
  • 2-3 drops food coloring

Method

  1. Preheat your oven to 350°F. Line a muffin tin with two baking cups.
  2. In a bowl, whisk together the sugar and egg white. Add the butter, vanilla, and milk and whisk until combined. Add the flour, baking powder, and salt and stir until you have a smooth batter.
  3. Pour the batter into the two baking cups and bake until the cupcake is fully set, 10 to 12 minutes. Let them cool before frosting.
  4. Place the softened butter in a bowl and mash it with a fork. Add the sugar, milk, and vanilla and stir the ingredients until you have a smooth frosting. If the frosting is wet and slimy, add another spoonful of powdered sugar. If it is very dry, add a tiny bit of milk. You may need to adjust several times until you are happy with the consistency. Add food coloring if desired and stir in you have a smooth color. Frost the cupcakes and serve.
